Ingredients:
1 c. uncooked brown rice
2 tsp. oil
1 onion
1 red pepper
3 tsp. prepared garlic
1 (roughly 1 lb.) ham steak
1 can red kidney beans, rinsed and drained
Cajun seasoning to taste
1/2 c. chicken broth
Directions:
- Cook the rice according to package directions.
- Meanwhile, heat oil in large nonstick skillet over medium-high heat. While oil is heating, chop onion and pepper (in that order) adding to pan as you cut. Add galic. Cook, stirring occasionally, until softened.
- While onion mixture is cooking, remove all visible fat from the ham steak, and cut it into small pieces, adding to onion mixture in skillet as you chop, stirring occasionally.
- When ham starts to brown, add the beans and Cajun seasoning. Cook, stirring occasionally, until heated through (around 2 minutes).
- Add chicken broth and cook until the liquid is almost completely absorbed.
- Serve mixture over the rice.
